I took a classic banana bread recipe and made it healthier.. I took a classic banana bread recipe and made it healthier..
Number of Servings: 12


    2 cups all-purpose flour
    1-1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    4 egg whites, beaten
    1-1/2 cups mashed ripe bananas (I used 4 medium ripe)
    1 cup sugar
    1/4 cup vegetable oil
    1/2 cup unsweetened applesauce


Preheat oven to 350 degrees F. Spray the bottom of your muffin pan and set aside. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix well, and make a well in the center of the flour mixture. Set aside.

In another bowl combine egg whites, bananas, sugar (save 1 tsp), oil, and applesauce. Add to the flour mixture. Stir until moist but batter will be lumpy. Spoon batter into muffin pan. Sprinkle remaining tsp of sugar on top. Cook for 40 minutes or until a toothpick comes out clean.

Next time I will try whole wheat flour and splenda to see how it comes out. I was nervous that since I was cutting out half the oil (or butter) and I used 4 egg whites instead of 2 whole eggs.. I didn't want to mess things up TOO much. Also.. I will add wal-nuts next time. I didn't have them on hand.
