    1 cup oats (I used Quaker minute oats)
    1 cup plain low fat soymilk
    1 Eggland's Best egg
    2/3 cup brown sugar
    2/3 cup imitation sour cream
    1 tsp vanilla extract
    3/4 cup flour
    1 tsp baking powder
    1tsp baking soda
    4 Tbsp cocoa
    1/4 cup ground flax seed
    1 cup Ghirardelli 60% cocoa chips

This could easily be vegan if egg is omitted.

Soak oats in milk for one hour (thus the prep time).

Preheat oven to 400 degrees Fahrenheit.
Use nonstick spray in cupcake pans, liners do not work.

Combine oat/milk with egg, sugar, imitation sour cream and vanilla.
Combine remaining dry ingredients, except flax, in a sifter and add to wet mixture.
Blend in flax and chocolate chips, do not over-mix.
Fill muffin cups, they will only slightly rise.
Check after 20 minutes, they should pull away from sides of pan and be firm. Bake another 5 minutes if necessary. Toothpick doesn't work because of ooey-gooey chocolate chips.
