    1 medium sweet or green pepper
    2.5 oz lean minced beef
    1.5 oz chopped onion
    60ml tomato passata
    1/4 tsp smoked paprika
    .5 oz grated Gruyere
    1 tsp olive oil


Fry onions and beef in olive oil. Add paprika and passata and simmer until liquid is reduced. Season with salt and pepper to taste. Cut top off pepper and scoop out the seeds. Stuff pepper with beef mixture, place in baking tray and top with grated Gruyere. Bake in oven at 200c for approx 20 minutes.
