    lb fresh asparagus (thin spears work best), cut into 2-inch pieces
    2 fresh sliced plum tomatoes
    2/3 cup Swiss cheese
    4 eggs, beaten
    tsp salt


Spray large skillet with non-stick spray. Mix all ingredients together. Cover and cook over low heat for 25 minutes or until mixture is set. Divide in half and serve.
