    2 cloves garlic
    1 green chilli
    4 cm fresh ginger
    80 ml soy/fish sauce
    40 ml good red/white vinegar
    80 ml water
    40 ml xylitol

    240 g rice
    300 g cooked prawns (boiled, peeled)
    1 red pepper, diced
    1 yellow pepper, diced
    3 spring onions, sliced thinly

    Salad leaves, lettuce and rocket


Makes 6

Cook the rice according to the on pack instructions (about 35 minutes)

While that's cooking prepare the vegetables and mix the dressing ingredient together.

When the rice is ready, drain, rinse and let cool thoroughly.

Toss the cool rice with the dressing. Then toss ingredients through.

Serve on salad leaves
