Ingredients

12 eggs
Gardein Seven Grain Crispy Tenders - 12 tenders
Smart deli baked ham style veggie protein slices - 6 slices
3 oz. blue cheese
1 bunch broccoli
1 tsp olive oil
Directions
Preheat oven to 350.
Cut broccoli into florets. Toss with 1 tsp oil and salt and pepper to taste. Roast at 400 degrees till slightly browned.
Cook 'chicken' tenders according to instructions.
Line muffin tin with liners.
Cut veggie ham in half and put in bottom of each muffin liner.
Add one tender and fold 'ham' over.
Divide broccoli equally and place into muffin cup.
Add 1 whole (uncooked) egg to each muffin cup. Sometimes the yolk breaks, sometimes not - doesn't matter.
Divide blue cheese evenly and sprinkle onto the top of the eggs.
Bake for 20 minutes or egg is set.
