    9 oz sweet potato, peeled and cubed into 1/2"
    9 oz russet potto, peeled and cubed into 1/2"
    3 oz onion, diced
    1 Tbsp olive oil
    4 Morningstar Farms breakfast patties, thawed, crumbled


Preheat oven to 350. Heat oil over med heat in a oven-safe frying pan. Saute onions 3 minutes, until slightly soft. Add both types of potatoes and toss in the oil to coat. Cook, stirring every few minutes to prevent scorching, until the potatoes are soft. lower heat and/or cover loosely, if necessary. When almost completely cooked through, about 15 minutes, add the sausage crumbles and remove from the heat. Whisk eggs in a bowl. Add salt and pepper to taste. Pour the eggs over the vegetables and sausage and shake the pan to settle the liquid evenly throughout the solids. Cook the frittata in the oven for 15 to 20 minutes, until just set. Serves 4.
