    Two cans of White Albacore tuna, drained
    .25 yellow bell pepper chopped
    .5 yellow onion chopped
    .5 cup of plain bread crumbs
    3 large eggs
    1 teaspoon Old Bay Seasoning (optional)


Using the olive oil, sautee the onion and peppers until soft.

Meanwhile, in a medium mixing bowl, combine the tuna, bread crumbs, eggs, and any seasoning until well mixed.

Add the sauteed vegetables to the mix.

Measure out four patties and cook in a non-stick pan until golden brown on both sides.

Serve with your choice of side dishes or as a sandwich.

Recipe makes 4 3" patties.
