Ingredients

    20 oz. lean ground turkey
    5 c. thawed frozen southern style potatoes
    2 c. shredded cheddar cheese
    1/2 c. green bell pepper (or green onion)
    5 extra large eggs
    2 c. low-fat milk
    1/4 tsp. pepper
    1/2 tsp. salt
    1/8 tsp. nutmeg
    paprika

Directions

Pre-heat oven to 350 degrees F.

Brown ground turkey in skillet. In large bowl, stir together potatoes, cheese, green bell pepper and turkey. Spoon mixture into 9" x 13" greased (e.g. cooking spray) baking dish. Blend together milk, eggs, salt, pepper and nutmeg in medium bowl or 4 cup liquid measuring cup. Pour over potato-sausage mixture. Sprinkle with paprika and bake for 45-60 minutes on until set.

Yields 12 - 3" x 3" piece servings.
