    1.25 cups whole wheat flour
    2 tsp baking powder
    2 tsp pumpkin pie spice
    .25 tsp baking soda
    .25 tsp salt
    1.5 cups bran buds
    .5 cup boiling water
    .75 cup buttermilk, low fat
    .25 cup oil
    1 egg
    .5 cup raisins


1. Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.

2. Stir together flour, baking powder & soda, pumpkin pie spice, and salt; set aside.

3. In large mixing bowl, stir together cereal and boiling water; let stand 2 minutes OR until water is absorbed.

4. Mix sugar into softened cereal until well combined.

5. Stir in buttermilk and oil.

6. Add egg and raisins; beat well.

7. Add flour mixture, stirring just until combined.

8. Portion batter evenly into muffin cups.

9. Bake about 20 minutes or until top of muffins are light golden and spring back when touched.

  • I just put these in the oven. My only concern the recipe does not call for sugar. Then the instructions say add sugar to the cereal. so I added half cup. We'll see.
