    2 1/4 tbsp canola oil
    2 1/4 tbsp unsweetened apple sauce
    1/4 cup egg beater
    1/3 cup sugar
    1 ripe banana, mashed
    1/4 cup skim milk
    1 cup plus 2 tbsp whole wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/3 cup chopped pecans
    1/2cup dark chocolate chips


Mix oil, applesauce, egg beater, and sugar and beat til smooth and creamy. Add banana and milk and stir well. Add flour, baking soda, and baking powder. Fold in nuts and chips. Fill eight lightly oiled muffin cups 2/3 full. Bake for 15-20 minutes until brown.
