Ingredients

    2 large red peppers
    3/4 pound firm tofu
    1/3 cup dry whole-grain bread crumbs
    2 tablespoons flaxseed meal
    1/4 cup sunflower seeds, ground
    2 tablespoons wheat germ
    2 large cloves garlic, minced
    1/4 cup chopped parsley
    1/2 teaspoon salt

Directions

Mash the tofu with a potato masher or fork and combine in a bowl with the remaining ingredients. Mix well to thoroughly blend, then knead gently by hand until the mixture holds together. Pack about 1/2 cup filling into each pepper half.

Place the pepper halves, filling up, in a vegetable steamer set over boiling water. Steam for 20 minutes, until the pepper shell is just tender.
