Dairy Free, Low Gluten yummy muffins! Makes a huge batch for freezing. You can add raisins/pecans/chocolate chips to make them even yummier! Just be sure to add it into the calorie count. Ingredients

    1 1/3 c spelt flour
    1 1/3 c. oat flour
    1 c. Brown Sugar, packed
    4 t Baking Powder
    1 t. Xanthan Gum,(optional)
    4 t. Cinnamon, ground
    1 t. Salt
    3 c. Sweet potato, cooked & mashed
    1 2/3 c Banana, mashed
    1/2 c. Land O Lakes, Light Butter, Salted
    4 Eggs, beaten slightly
    1 1/2 c. Almond Breeze Almond Milk, Unsweetened Original

Directions

Preheat oven to 400 degrees F.
Combine Dry ingred. in large bowl.
Combine Wet ingred in medium bowl.
Add Wet to Dry and mix until just combined.
(add in any chips/nuts/etc)
Bake in greased muffin tins for 18-20 minutes.
Makes 33 muffins.
