    1/2 cup white flour
    1 1/2 cups whole wheat flour
    1/2 cup oat flour
    1/2 cup sugar
    1/2 tsp salt
    8 tsp active dry or rapid rise yeast
    1 1/3 cup warm water
    5 tbsp butter
    1 tsp vanilla extract
    2 large egg

    1 cup rolled oats or oat flour
    1/2 cup chopped walnuts
    1/4 cup white sugar
    1 tsp cinnamon
    1/4 cup Peach Yogurt
    1 tbsp vegetable oil

    2 1/2 cups Powdered Sugar
    2 tbsp milk
    4 tbsp shortening
    1 tsp vanilla
    dash of salt


Preheat oven to 350 degrees. Grease two muffin pans.
Dissolve a little bit of sugar in warm water, add yeast. Let this mixture sit until frothy, 5-10 min. Meanwhile, combine flours, sugar, and salt in a mixing bowl.
Add yeast mixture, eggs, vanilla, and butter. Mix well.
Use an ice cream scoop, filling it half full, to transfer dough to greased pans. Let the dough raise in the pans.
Mix the filling (optional-- you may use your choice of jelly or preserves). Combine all of the dry ingredients, mix well. Add yogurt and vegetable oil. Mix well.
Press 1/2 tbsp of the mixture into each muffin.
Bake each pan separately for approx. 15 minutes, or until muffins are golden brown on the edges.
Mix frosting ingredients and pour 2 tbsp on each muffin, right after removing the pan from the oven.
