Introduction

Ingredients

    Chicken Breast, no skin, 1 breast, bone and skin removed (remove)
    *Bread Crumbs (Progresso Panko), 0.25 cup (remove)
    Egg substitute, liquid (Egg Beaters), .25 cup (remove)
    *Italian Herb Seasoning - McCormick, 2 tsp (remove)
    Tomato Sauce, .5 cup (remove)
    Mozzarella Cheese, part skim milk, 1 oz (remove)

Directions

Split a whole chicken breast into 2 halves. Season chicken breasts with prefered seasonings and allow to sit for at least 15 minutes. Next, dip breasts in egg beaters, coating both sides and then dredge each side of each breast in panko bread crumbs and place on a lightly greased pan. Bake at 350 degrees for 50 minutes, turning carefully avery 10 minutes.

In the meantime, heat 1 8 oz can of tomato sauce, stirring in 2 tsp Italian Seasoning.

For the last 10 minutes top chicken with sauce and .5 oz shredded mozzarella cheese and allow to bake until cheese is melted.

Serve with rice or noodles.

Makes 2 servings: .5 chicken breast each serving.
