Ingredients

    egg white equivalent to 3 eggs
    .5 cup flax meal
    .75 cup unsweetened applesauce
    1 cup packed brown sugar
    2 cups grated zucchini
    2 cups whole wheat flour
    .25 tsp baking powder
    2 tsp baking soda
    2 tsp vanilla extract
    1tsp salt
    3 tsp cinnamon
    1 cup chopped walnuts (optional)
    .25 cup wheat germ

Directions

In a large bowl, combine egg whites, flax meal, applesauce, sugar, zucchini and vanilla. Mix well. Add flour, baking powder, soda, salt, wheat germ and cinnamon; stir to combine.Stir in nuts, if desired.
Bake at 350 for 1 hour or until knife inserted comes out clean.
