Ingredients

    6 c. squash peeled and large diced
    2 medium or 1 large onion thin sliced
    1 c plain tomato sauce
    salt, pepper and garlic powder to taste
    1 Tbs. EVOO


Directions

In a medium sauce pan, heat EVOO over medium heat, sweat onions till opaque, add squash, tomato sauce, and seasonings. Bring to a boil lower heat and simmer for about 20 minutes or until squash is tender.

Served as a side this recipe makes 6 servings.

It can also be served over rice or with precooked elbow macaroni, then it becomes a satisfying meal (make the portions larger)
