Introduction

Using Cauliflower to replace potatoes adds fiber and nutrients. Using lowfat or nonfat yogurt adds flavor and trims calories. You can change the ratio of white potatoes, sweet potatoes and cauliflower to change the flavor; and use vegetable broth and leave out the ham to make it vegetarian. Ingredients

    3-4 large cloves garlic, 1/2 cup onion, 3-4 large Yukon Gold Potatoes, 1 large sweet potato, 1 medium head of cauliflower, 2 tablespoons grapeseed oil, 2 cups Organic Chicken broth, 1/2 cup each chopped celery and carrots, 2 cups cubed very lean ham, 1 cup plain low fat yogurt, 1 can evaporated nonfat milk, sea salt and cayenne pepper to taste.

Directions

Saute minced garlic and onion in 1 tablespoon of the oil till onion is translucent, add chicken broth and peeled, chopped potatoes and sweet potato, and lay chopped head of cauliflower on top. Simmer until potatoes are very soft and mash till smooth or blend with stick blender. Saute chopped celery and carrots in the other tablespoon of oil till desired degree of softness. I like mine just a little crunchy. Then add to blended mixture. Stir in the yogurt, evaporated milk and ham. Then add sea salt and cayenne pepper to taste and heat to serving temperature.
