Ingredients

    3 cups Pumpkin, chopped
    1 large Onion, chopped
    1 cup Carrots, chopped
    1 cup celery, chopped
    7 Garlic cloves
    4 tsbp Olive oil
    Salt
    Pepper
    4 cups Water

Directions

Mix pumpkin and garlic with olive oil, salt and pepper
Roast in oven 180 degrees for 30 minutes
Boil onion, celery and carrots in water to make vegetable stock
When cool, add roasted squash and garlic and blend until desired consistency.

Serves approx 6 bowls
