    1 1/2 cups 1% milk
    2 tsp lemon zest
    3 egg yolks
    1 egg
    1/3 cup sugar
    4 tsp cornstarch
    1 1/2 tsp vanilla


In small saucepan, heat milk and lemon zest, heat over medium heat until steaming, not boiling.

In a large bowl, whisk yolks, egg, sugar, cornstarch and vanilla. Slowly stir in hot milk and divide evenly into 4, 6oz custard cups.

Place custard cups into a 8inch cake pan. Pour boiling water into the cake pan 1 inch up the custard cups.

Bake for 40 minutes in 325*F oven. Let cool for 10 minutes. Cover loosely and refridgerate until cold, about 4 hours.
