Introduction

Number of Servings: 8

Ingredients

    4 cups dry whole wheat rotinin pasta
    1 pint grape or cherry tomatoes
    1 cup thinly sliced/diced celery, including the leafy top part
    3 green onions (Spark's listings didn't have green onions, used scallions in the calculations)
    2 medium cucumbers, one peeled, one with skin on
    2/3 cup plain fat free yogurt
    10 fresh mint leaves (not found in Spark's listings)

Directions

Prepare pasta according to package directions. Drain and rinse in very cold water.

Wash all produce and peel one of the cucumbers. Dice the peeled cucumber and puree it in a blender or food processor (this might take a while in a blender, but it will work!). Add the mint to the blender/food processors until completely incorporated in the cucumber. Add the yogurt and blend/process until fully mixed. This is the dressing. Set aside.

Chop the remaining produce into bite sized pieces. Mix in the cooled pasta (this is a cool pasta salad, not a hot pasta dish), veggies and dressing together.

YUM!

You might want to add other seasonings to the finished product to your taste.
