Ingredients

    3 eggs
    3 c. flour
    3 tsp. vanilla
    2 c. sugar
    1 tsp. cinnamon
    1 tsp. baking soda
    1/4 tsp. baking powder
    1 c. oil
    2 c. grated zucchini
    1 tsp. salt

Directions

Beat eggs until foamy. Add zucchini, vanilla, sugar and oil. Mix well. Add flour, baking soda, baking powder, cinnamon, and salt. Mix well. Pour into bread pans. Bake at 350. 1 hour for large loaf pans, 35 minutes for small loaf pans. Makes 2 loaves or 4 loaves depending on size of pans.
