Introduction

Ingredients

    All-purpose flour, white - 2 cups
    Whole wheat flour - 2 cups
    Baking soda - 4 tsp.
    Salt - 1 tsp.
    Cinnamon - 4 tsp.
    Butter, softened- 1 cup (2 sticks)
    White sugar - 1 1/2 cups
    Brown sugar - 1 1/2 cups (packed)
    Eggs - 3 large
    Vanilla extract - 1 tsp.
    Almond extract - 1 tsp.
    Mango - 2 fresh, peeled, pitted and chopped
    Pineapple, crushed - 2 cups
    Pecans, chopped - 1/2 cup

Directions

Preheat oven to 350 degrees. Lightly grease 4 loaf pans (8" x 4"); set aside.

In a small bowl, stir together flours, baking soda, salt and cinnamon. Set side.

In a large bowl, beat butter and sugars until mixed; add eggs and extracts and mix well. Add buttermilk and fruit and mix until blended. Stir in nuts.

Add flour mixture to the liquid mixture. Mix well.

Pour 2 cupfuls of batter into each loaf pan. Bake for 50-60 minutes or until a knife inserted in center comes out clean.

Serving size = 1 slice. Yield per loaf = 8 slices; Recipe makes 32 slices/servings.
