4 medium Yukon Gold potatoes, baked
    1/2 cup chopped scallions
    2 thick-cut bacon strips, crumbled
    2 cups 1% milk (I use organic)
    Salt & pepper to taste
1/4 cup cheddar cheese, as garnish

You can bake your potatoes at any time; I sometimes make extra baked potatoes when I'm making dinner, so I can make this soup the next day. Make sure you scrub the potatoes well before you bake them, because the skins go into the soup.

Mash the baked potatoes with the milk until thoroughly blended. I like my soup to have chunks of potato in it. Heat through. Add crumbled bacon slices and scallions, stir until everything is heated evenly. Serve and add cheese as garnish (1/4 cup for the whole pot). Makes 4 servings.
