Introduction
This is my Grandma's recipe. I would really love it if someone could help me figure out how to lower the calories and fat! I made this recently, but I ended up freezing the second pie and my husband ate most of the other pie because its just too much fat! I'm sure its the sausage....maybe turkey sausage?! Ingredients

2 10oz pkgs frozen spinach, heated and thoroughly drained.
1 lb bulk pork sausage
1 can 98% fat free cream of mushroom soup
2 ready made pie crusts
1 cup mushrooms, sliced
1 egg
1 8 oz pkg of mozzarella cheese part skim
Directions
Pre-heat oven to 375. Cook sausage, drain and rinse excess fat. Mix all ingredients together (reserve a little cheese) and pour into pie crusts. Sprinkle tops with remaining cheese. Bake for about 1 hour or until crust is golden and spinach mix looks set.

Pork sausage has a lot of fat but also this recipe has a lot of it. Try using chicken or turkey sausage, but less of it. You can bump up the amount of mushrooms (try a very fine mince) or add extra vegetables or crumbled tofu to make up the extra volume. - 6/20/10
