Ingredients

    1/2 cup dry lentils, rinsed
    1/4 cup dry hulled or pearl barley
    4 cups water or Vegetable Broth (water used in calorie count)
    1 onion, chopped
    1 garlic clove, pressed or minced
    1 carrot, diced
    1 celery stalk, sliced
    1/2 teaspoon dried oregano
    1/2 teaspoon ground cumin
    1/4 teaspoon crushed red pepper
    1/4 teaspoon black pepper

Directions

Place all ingredients except salt into a large pot and bring to a simmer. COver and cook, stirring occasionally, until lentils and barley are tender, about 1 hour. Add salt to taste.
