Introduction

My family loves this easy, refreshing summer dinner salad. My family loves this easy, refreshing summer dinner salad.
Number of Servings: 6

Ingredients

    2 cans (12.5 oz cans) chicken breast in water, drained
    4 stalks celery, chopped
    2 medium carrots, shredded
    1/2 c. chopped onion
    1 1/2 c. miracle whip
    1/2 c. milk, 1%
    6 tsp. granulated fructose
    1 tsp. salt
    1/4 tsp. black pepper
    7 oz. potato sticks

Directions

Put chicken in a large bowl. Add celery, carrot and onion. In a smaller bowl, mix miracle whip, salt, pepper, fructose, and enough milk to make dressing consistency. It should not taste like miracle whip; a little sweet but a little salty, too.
Pour over chicken mixture and stir well. Add potato sticks just before serving. I use fructose because I have diabetes, but you can use sugar instead.
