Introduction
This simple soup is so easy to prep, cook, and reheat- I'll do up a pot then freeze a few containers to take to work for an easy lunch. This simple soup is so easy to prep, cook, and reheat- I'll do up a pot then freeze a few containers to take to work for an easy lunch.Number of Servings: 10
Ingredients
-
1 Head of Cabbage
1 Hillshire Farm Kielbasa or Smoked Sausage
4 "largish" red potatoes (or 4 small Idaho's)
Pepper to taste
Directions
Chop up cabbage into bite sized chunks (about 2 inches - they will cook down).
Slice sausage in 1/2 - 1 inch pieces.
Scrub potatoes. I will peel them if using Idaho potatoes, but I won't if using Golds or Reds. Cut potatoes into 1-2 inch chunks.
Toss them all in a stock pot, add water til contents just covered. Bring to boil, stir once. Lower heat to rolling boil then cover and let cook for 25-30 min or until potatoes are done to your liking.
Add pepper to taste...you won't need any salt as the sausage is a bit salty.
If you like your veggies more firm or plan on freezing/reheating, be conservative on cook time. My mom likes her's soft and usually cooks closer to 40min.
Enjoy!
