    1 lb Raw Shrimp - extra large
    1 bunch Broccoli - florettes only
    2 cups Fresh Mushrooms - sliced
    1 small onion - chopped
    2 cloves garlic - minced
    2-3 Tbsp. Extra Virgin Olive Oil

    2 cups Long Grain Brown Rice - prepared


In a large non-stick skillet - over medium heat - heat olive oil, add minced garlic. Saute in oil under just starting to turn brown, add onions and saute until tender.

Add shrimp top skillet, saute shrimp for approximately 3 minutes - remove shrimp from skillet, preferably in a bowl and cover to keep shrimp warm - the shrimp will continue to cook for a few minutes after removed form the skillet.
Make sure you only remove the shrimp from the skillet.

In same skillet, add mushroom to the remainly, oil, onion, garlic. Stir and cover. Sweat mushroom for about two minutes. Add broccoli florettes to skillet, stir and cover. Cook broccoli and mushroom until broccoli the desired tenderness. For crisp/tender approximately 7-8 minutes. Be sure to stir from time to time.

After broccoli has reached the desired tenderness, add the shrimp back to the skillet. Re-heat shrimp and vegatables for about 3 minutes.

Serve over prepared brown rice. (1 cup of rice per serving - included in nutritional information)
