Introduction

These were my favorite cookies growing up, so I decided they needed a makeover! I substituted sugar with xylitol and used all organic ingredients. These were my favorite cookies growing up, so I decided they needed a makeover! I substituted sugar with xylitol and used all organic ingredients.
Number of Servings: 30

Ingredients

    2 Cups of Xylitol*
    1/2 Cup of Organic Milk
    1 Stick of Organic Butter
    3 Tbsp of Organic Cocoa
    1 Tsp of Organic Ground Sea Salt
    3 Cups of Gluten-Free Organic Oats or Oatmeal
    1 Tsp Organic Vanilla Extract
    1/2 Cup of Organic Creamy Peanut Butter
    1 Cup Organic Unsweetened Coconut

    * If you prefer more sweetness, you can take out one or two tbsp of xylitol and substitute with dry Stevia.

Directions

1. Combine xylitol, milk, butter, cocoa, and salt in a pot.
2. Bring to a boil for 5 minutes while continually stirring.
3. Remove from heat and add, one cup at a time, vanilla, peanut butter, coconut, and oatmeal.
4. Use spoon or ice cream scooper to drop onto wax paper.
5. Allow cookies to set overnight.

One cookie is one serving.
