Introduction

This is from what I had in the kitchen to make a quick dinner. It's a very mild version of the true Cajun Red Beans & Rice. I'm sure my husband will add Tabasco. The sodium is high because of the Hillshire Farms Smoked turkey and the beans - substitutions may reduce that amount.

Number of Servings: 5

Ingredients

    Turkey sausage (sliced)
    drained diced tomatoes (1 can)
    Red Beans - Louisiana Style, S & W (not drained) (1 can)
    Village Harvest Frozen Brown Rice (2 cups)

Directions

sliced the sausage and browned lightly (already cooked so just need to heat it up), added rice to heat for a few minutes. Drained the tomatoes, added the beans. I use Mrs. Dash no salt Table Blend for seasoning -- season to taste and simmered covered for 20 minutes.

Makes 5 1-Cup servings.
