    About 3 boneless, skinless chicken breasts, diced
    2 10 oz packages of spinach, thawed and drained well
    1 package pasta cooked (whatever you prefer, we use bowtie)
    1 cup skim milk
    1/4 cup flour
    2 tbsp butter or olive oil
    1 cup chicken broth
    1/2 cup parmesan cheese
    salt and pepper to taste
    1/4 cup bread crumbs


Place pasta and chicken in large casserole dish.
In sauce pan melt butter (or heat olive oil) and add flour to make a roux. Cook a minute and then add milk and chicken broth, salt and pepper. Cook until thickened, add half of parmesan cheese and then add spinach and mix well.

Pour sauce, spinach mixture over pasta and chicken and mix well. Mix bread crumbs and remaining parmesan and sprinkle over mixture. Bake at 350 for about 30 minutes, until hot and bubbly.
