Ingredients

White Flour 1c.
Whole Wheat Flour 1c.
Brown Sugar 1/4c., packed
Baking Powder 1 tbsp.
Salt 1/2 tsp.
Large egg
Mashed Banana 1c.
Unsweetened Applesauce 1/4c.
Canola Oil 1 tbsp.
Peanut Butter 1/2c.
Vanilla Soy Milk 2/3 c.
Mini Semi-Sweet Chocolate Chips 6 tbsp.
Directions
Measure first 5 ingredients into large bowl. Stir.
Beat next 5 ingredients with a whisk in a medium bowl. Make a well in dry ingredients, add the wet to the dry.
Add chocolate chips, stir until just moistened. Fill 12 paper-lined muffin cups 3/4 full. Bake in 375 deg. oven for 18-20 minutes or until a toothpick inserted in to center comes out clean.
Let stand in pan for 5 min, then remove to a wire rack to cool.
Makes 12 muffins.
