Ingredients

    Add the veggies, water and all
    Peas, canned, 1 can
    Barley, pearled, cooked, 1 cup
    Collards, 2 cup, chopped
    Canned Tomatoes, 1 can
    Yellow Sweet Corn, Canned, 1 can
    Carrots, cooked, 1 can
    Beans, red kidney, 1 can drained
    Chickpeas (garbanzo beans), 1 can drained
    *Green Giant Cut Green Beans, can, 1 can
    Onions, raw, 1 medium chopped
    Vegetable Broth, 4 cup
    1 pack onion soup mix

Directions

Use all canned ingredients and pour entire contents of canned veggies in - including juice. Drain beans and chick peas and add. Chop the onion, simmer. Cook barley according to instructions and add at the end (barley takesa about 45 minutes). It's that easy. Can be done with beef but we are meat free. Makes about 10 2-cup servings.
