This is a lovely fresh tasting asparagus soup. The "fage" listed is a brand of Greek yogurt. This is a lovely fresh tasting asparagus soup. The "fage" listed is a brand of Greek yogurt.
Number of Servings: 3


    3 cups chopped asparagus
    1 cups water
    1 cup chicken stock
    3 oz. Fage 0% Greek yogurt (or any other kind of Greek yogurt)
    1 tsp lemon zest, shredded
    1/8 tsp nutmeg


Cut the asparagus into 1 inch pieces. Cook in two cups water until tender. Add chicken stock, Greek yogurt, lemon zest, and nutmeg. Using an immersion blender, blend until smooth. (If you like chunks, you may take out 1/2 cup of asparagus, blend the rest, and re-add the 1/2 cup of cooked asparagus. Reheat and serve.
Makes 3 generous 1-cup servings.

    Hi Jo, start with 1, but if it's too thick, you can add more.
