Ingredients

1 1/2 cups flour
2 Tbsp Splenda Brown Sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 cup Banana Nut Crisp Cereal (Kroger Brand)
1/2 cup sour cream (light)
1/2 cup frozen apple juice concentrate
1/3 cup apple sauce
1 egg
1/2 cup mashed banana (about 1 large)
Directions
1. Heat oven to 400 degrees F. Spray muffin cups with nonstick spray or use paper muffin cups (sprayed)
2. In small mixing bowl, stir together flour, brown sugar, baking powder, baking soda, nutmeg and salt. Set aside.
3. In large mixing bowl, combine cereal, sour cream and apple juice concentrate. Let stand 5 minutes or until cereal is softened. Add apple sauce, egg and mashed banana. Beat well. Add flour mixture, stirring only until combined. Divide batter evenly among muffin cups.
4. Bake 20 minutes or until muffins test done with a wooden toothpick. Immediately remove from pan. Serve warm.
