My boyfriend who is Italian by heritage modified his family recipe to eliminate the ingredients I don't like! It's super yummy and has lots of great vegetables. Number of Servings: 6

Ingredients

    2 cans diced tomatoes
    1 can tomato paste
    1 cup chopped onion
    .5 cup chopped carrots
    .5 cup chopped celery
    .5 cup chopped red bell pepper
    .5 cup chopped green bell pepper
    5 tbsp minced garlic
    1 tsp olive oil

    Oregano, Basil, Parsley, Salt, and Pepper to taste
    Consider adding Red Wine for flavor (not included in calorie count)

Directions

In a large saucepan, heat the olive oil. Add the vegetables (except the canned items) and sautee until the onions start to turn translucent. Add the canned tomatoes and tomato paste. Season to taste. Let simmer for 20-40 minutes.

Serve with pasta and meatballs or other items as desired (not included in calorie count)
