Introduction

Ingredients

    1 package House Foods Tofu Shirataki (Fettuccine Style - 8 oz
    1/4 cup Cheesy Ragu Light Parmesan Alfredo sauce
    1 wedge Laughing Cow Swiss Cheese
    2 tsp Kraft Grated Parmesan Cheese
    1 sprig or tsp chopped fresh Parsley
    2 tsp chopped onion (fresh or frozen)
    3 small mushrooms, finely diced
    1/4 cup zucchini or yellow squash, finely diced
    1/4 tsp Minced Garlic
    1/2 tsp Land o lakes seasoning powder, sharp cheddar flavor (optional)
    salt and pepper to taste
    Juice from 1 lemon wedge

Directions

Dice mushrooms, zucchini and onions. Spray skillet with nonstick cooking spray. Sautee diced vegetables and garlic in skillet on medium heat. Meanwhile, drain tofu noodles through a strainer and pat dry with paper towel. Microwave for 1 min 15 sec (or slightly longer if you have lower power microwave).
Once vegetables are tender, add Laughing Cow cheese wedge (cut into pieces) and Alfredo Sauce. Cook over medium heat until cheese melts, stirring often. Add squeeze of lemon juice; sprinkle on salt, pepper and optional Sharp Cheddar seasoning. Once these are all well blended into the sauce, cut fettuccine noodles and add them into the pan with the sauce until everything is heated through and mixed well together. (Continue to stir frequently so mixture does not stick to the pan or burn.)
Remove from heat. Plate up this wonderful delicacy and garnish with parmesan cheese sprinkled over the top along with fresh parsley. Dig in and enjoy!
