    1 6 oz. can tuna in water, drained
    1 16 oz. can cannellini beans, rinsed
    1 medium cucumber, peeled and chopped
    1 c. grape tomatoes, halved
    8 oz. cooked rotini pasta
    1 garlic clove, minced
    1/2 t. salt
    1 t. chopped fresh rosemary
    2 T. fresh lemon juice
    2 T. olive oil
    6 c. baby spinach
    1/4 c. capers (optional)


Cook pasta until done. Toss together tuna, beans, cucumber & tomatoes, add pasta. Press garlic, whisk in oil and lemon juice and rosemary. Add spinach and capers if using to pasta mixture and toss with dressing.
