    8 small red potatoes, boiled until tender, then cut in half
    1 T. olive oil
    3 slices of bacon
    6 green onions, sliced up
    1 T. white wine vinegar
    1.5 t. whole grain mustard
    salt and pepper to taste


While potatoes are boiling, cook bacon until brown & crispy, add the scallions and saute lightly. Add the white wine vinegar & mustard and combine thoroughly. After cutting potatoes in half, mix with bacon & scallions, gently, toss with olive oil, and sprinkle with salt and pepper. Bake at 375 for about 20 minutes.
