Introduction

Tasty White Bean Soup with Fennel and Tomatoes. You can make it vegetarian by adding vegetable stock instead of chicken. Garnish with fresh chopped italian parsley. Ingredients

    One White Onion chopped about 1 cup
    4 cloves garlic chopped
    1 medium carrot chopped (1/2 cup)
    2 medium celery stalks chopped about 1 cup
    1 medium size Fennel Bulb (trim end off and chop halfway up the stem, reserve feathery fronts for garnish) chop into small dice.
    1 Large Can Stewed Tomatoes chopped
    1 15oz can white beans, canneloni, drained
    3 15oz cans chicken broth/stock



Directions

Chop all vegetable ingredients and add to pan with olive oil. Saute until lightly browned. Add tomatoes and chicken broth and cook for 1 hour. Add can of drained white beans. Cook additional 1/2 hour. Turn off heat and let cool for 10 minutes. Take out half of soup and puree in food processor. Add back in and garnish with parsely and reserved fennel fronds. Reheat and serve.

    I just finished editing the recipe. I quickly added it so I could calculate the nutrition. Hope you enjoy. I also added my favorite black bean soup recipe. Sorry it took so long.
