    1.5C Onion (diced)
    1lb Lean Ground Beef
    2C Minute Rice
    1 can Rotel tomatoes w/green chiles
    1 can Cream of mushroom soup
    4t Garlic
    2.5C Water


Saute Onion and garlic. Add Ground beef and cook till browned.
In Casserole dish (or Dutch Oven) put rice, rotels, soup. Put ground beef mix on top of all that. Add Water and stir to mix.

Cover and cook at 350 for 1 hour.

This can be done in a slow cooker on low for 7 hours.

This serves about 8 (1 cup servings).

    I tried this in the crockpot and it burnt in 5 hours, I had even added almost an extra cup of water. Will never make in the crockpot again - 10/7/09

    I would add more garlic and maybe cilantro, needed something else, may be better used in green peppers - 6/11/08

    Wonderful, made this in a dutch oven outside and it made the neighbors drool. - 7/14/07
