    2 medium eggplants; 1 peeled, 1 not
    1/2 medium onion; chopped
    2 cloves garlic; chopped
    0.5 tsp garlic salt
    1 tsp garlic powder
    1/2 tsp sesame seeds
    2 tbsp extra virgin olive oil
    1/2 tsp ground cumin
    1/2 tsp onion powder
    1/2 tsp paprika
    1/8 tsp cayenne pepper


Preheat oven to 450. Use pan spray to coat a baking sheet.

Chop all veggies and add together in a medium sized mixing bowl. Add olive oil and mix well so all veggies are coated a tad. Add all seasonings and mix again. Dump all veggies onto baking sheet and sprinkle a dust of garlic salt on top and spray (lightly) with pan spray.

Place in oven for approx 35-45 minutes, or until veggies are brown and roasted (cooking time may vary for your oven).
