This is a nice alternative to beef meat loaf. This is a nice alternative to beef meat loaf.
Number of Servings: 8


    32 ounces ground chicken
    1 sleeve of Ritz-like crackers smashed to smitherenes
    1/2 cup of plain bread crumbs
    2 large fresh eggs
    About 1/4 cup of honey bbq sauce of your choice
    1 tsp ground sage
    1 tbsp each of garlic and onion powder

    1 cup ketchup
    1/4 cup honey
    1 tbsp balsamic vinegar
    and a little less than 1 tsp of chipotle powder


Preheat the oven to 375 F with rack in the middle.
In a large bowl, combine chicken, ground crackers and bread crumbs, bbq sauce, eggs, and seasonings-either with your hands or a large spoon. Evenly spread in an 8" by 8" square pan and place in oven until cooked all the way through. (About 1.5 hours)
About 1 hour into baking time, in a small sauce pot on medium heat, combine the ingredients for glaze. As soon as it starts to bubble, remove from heat and pour/spread evenly over chicken loaf.
Continue baking until completely cooked. Rare chicken=owee tummy.
