Introduction

This is great for brunch and makes enough for the whole family. How big it is depends on the size of your pan. I used an 8 1/2 inch skillet. The bigger the skillet, the more egg or egg whites you need.

Ingredients

    2 eggs
    2 egg whites
    1/2 cup diced turkey ham ( you can use any kind of meat that you want or completely leave it out)
    1/2 cup diced tomatoes
    1/2 cup onion
    3/4 cup mushrooms
    1/4 cup nonfat milk
    salt and pepper to taste
    2 tbsp light butter
    3/4 cup reduced fat feta cheese or your favorite cheese

Directions

First chop your veggies and your meat. Put one tbsp of butter in your skillet and add your veggies and meat. Let them cook for about 5 minutes, stirring occasionally. While your veggies and meat cook, combine your eggs, egg whites, and milk in a bowl and whisk together. Make sure to whisk them very well so that your fritatta comes out nice and fluffy. When your veggies and meat are done, put them in a bowl and clean out your pan. Put your pan back on the stove and add your other tbsp of butter. Spread the butter all around your pan. When the butter is melted and covering the pan, add your eggs and then add your veggies and meat. Spread your veggies and meat evenly and sprinkle the cheese on top. Let the fritatta cook on med for about 5 minutes. Then turn on your broiler and put the pan in the oven so that the top can set, about 3 minutes. When its done, put the fritatta on a plate and cut it into 4 equal pieces and you're done.
