Ingredients

    8 oz Beef (lean)
    1 medium onion (sliced or chopped)
    1 large carrot, sliced
    1/2 cup green pepper
    1 cup peas (frozen or fresh)
    0.5 cup raisins
    3 Tbsp cilantro, fresh
    2 cloves garlic, finely chopped
    1/4 tsp ground ginger
    1/2 oz lemon juice or Rice wine vinegar
    2 Tbsp curry paste (green or red)
    1 - 1.5 cup coconut milk (or 1 cup beef stock + 2 Tbsp Plain Yogurt)
    2 Tbsp Mirin (or 1 Tbsp sugar)
    2 cup Rice, glutinous or short grain - COOKED

Directions

This is a type of stir fry - for best results have all ingredients prepared and measured before starting to cook. Slice beef thinly, mix in a bowl with garlic and ginger and set aside. Prepare vegetables and set aside. Prepare rice in advance or wait until it is in its final minutes of cooking before starting the curry.
Heat a non-stick frying pan or wok over medium-high stove top, add oil. Add curry paste and cook 30 seconds stirring constantly. Add beef mixture to wok and stir fry 1 minute. Add onions and carrots, continue to stir for 3 minutes, do not let contents settle or stick to pan. Add peppers, stir 1 minute more. Add peas and raisins and stir to mix. Reduce heat slightly and add lemon juice or vinegar. Stir quickly to coat. Immediately add coconut milk or beef stock and yogurt and stir well. Reduce heat to simmer, add mirin or sugar. Stir in cilantro. Make sure everything is well combined and let simmer, uncovered for 10 minutes, stirring occasionally. Add salt to taste if desired.
Serve over 1/2 cup rice. Garnish with hot sauce and extra cilantro if desired. Serves 4
