Introduction

My version of scalloped potatoes does not included cheese or margarine. Healthy choice mushroom soup makes an easy choice to make a quick delicious meal. My version of scalloped potatoes does not included cheese or margarine. Healthy choice mushroom soup makes an easy choice to make a quick delicious meal.
Number of Servings: 4

Ingredients

    4 large potatoes sliced thin (about 4 pounds)
    1 large onion sliced thin (approx. 1 cup)
    1 tin of Healthy Request Mushroom Soup (approx. 1 cup)
    1/2 cup water (skim milk is acceptable but not in calorie count)
    1/4 tsp Paprika or Parsley or both(optional)
    1 tsp Extra Virgin Olive Oil(I use non-stick spray for baking dish the calculator tool wouldn't find Pam for me.)

Directions

Spray a 9x13 baking dish and set oven to 375 to heat.
Thinly slice potatoes and onions and layer in dish. Mix water, soup, and spices you choose to add. Pour over potatoes and onions. Add paprika over top of potatoes at this time if you choose to use it. Cover with tin foil and bake for 1 hour. Remove cover and bake 15 minutes longer or until tender. Remove from oven and cool for 5 minutes before serving.
