    2 lb. top round, cut into thin strips
    1 T. Paprika
    1 1/2 tsp. Oregano
    1/2 tsp. Chili powder
    1/2 tsp. Garlic powder
    1/4 tsp. Black pepper
    1/8 tsp. Red pepper
    1/4 tsp. dry mustard
    1 1/2 lb. Idaho Potatoes, cut to bite size pieces
    6 Cups Onion, chopped
    4 Cups Beef Broth, fat free
    4 lg. garlic cloves, minced
    2 Cups Carrot, shredded
    4 Cups Kale or Spinach, stems removed, torn
    Olive Oil Spray


Combine paprika through dry mustard in a zip lock bag. Shake beef strips in the spice mixture & coat well. Spray a large skillet with olive oil spray & brown the meat. Add the rest of the ingredients except the greens. Simmer 1 hour. Layer the greens on top and cook an additional 15 minutes.
