This is my version of The Chili Gravy for Tofu Enchiladas. This is my version of The Chili Gravy for Tofu Enchiladas.
Number of Servings: 1


    2-3 tablespoons lt olive oil
    1 cup diced yellow onion
    1 cup diced red bell pepper
    3 cloves garlic
    3 tbsp chili powder
    1/2 tsp salt
    2 3/4 cups water
    3 tbsp corn starch


Heat non-reactive pan to medium and add lt olive oil until shimmers (I usually start with a couple tablespoons and add some more as needed).
Add diced onion. Cook for a couple of minutes until a little translucent.
Add diced bell pepper. Cook for a couple more minutes. Add more oil if needed.
Add garlic. Chili Powder. Cook for just a couple more minutes. Do not burn.
Add salt. Added 2 1/2 cups of water. Wisk corn starch in last part of warm water and wisk into soup once it has heated a little.
Cover and simmer on low for 20 minutes.
