    1 T olive oil
    1C onion chopped
    1 cup arborio rice
    5 cups chicken broth, hot
    1 C pureed pumpkin
    1/4 cup butter


saute onion in olive oil until translucent
Add rice and cont to saute until rice becomes opaque
slowly add broth, 1/2 c at a time, allowing broth to be absorbed before adding another ladle full
stir in pumpkin, cheese and butter
season to taste.
